I guess most of us who work Monday through Friday wonder why weekends seem to zip by. I know I would gladly work four 10-hour days to have a 3 day weekend, but that will never happen, not at the ol' Eagle anyway. We've spent most of the weekend running errands and doing chores. Corby and Kaitlin did some baking yesterday. Corby baked a great coffee cake, and Kaitlin made pumpkin cookies. It was our Sunday to bring treats for our Sunday school class, and the coffee cake is one of our favorites. The best part - it's really EASY to make. Even I can make it...that is when Corby will let me near the kitchen! HA...Anyway, here's the recipe:
CREAM CHEESE COFFEE CAKE
Makes one 9x13 pan
2 pkgs. cream cheese
2 pkgs. crescent rolls
1 cup sugar
2 egg yolks, separated from whites (keep whites)
1 tsp. vanilla
1 cup walnuts or pecans (we prefer pecans)
1/4 cup sugar
Take 1 pkg. crescent rolls; separate, flatten out and lay in bottom of 9x13 glass dish. Mix cream cheese, 1 cup sugar, vanilla and egg yolks until smooth. Spread evenly over crescent rolls. Take second can of crescent rolls, flatten out to spread as layer over top of cream cheese mixture. Whip egg whites until foamy/fluffy. Brush over crescent roll top. Sprinkle 1/4 cup sugar over egg whites, then sprinkle nuts over top. Bake for 35 minutes at 325 or until brown on top. Refrigerate after cooling.

Corby talked to Charles tonight and he's not doing well. His pain is getting worse, so we are not sure how much longer he has. Corby is going to go down to visit him next weekend. He's worried about him being alone. Doug and Debbie are keeping an eye on him, Hospice visits often, and he has neighbors who check on him too; so we are grateful to all of them. Please keep us in your prayers.
Brandon called Friday night. Of course, the only reason he called is because he was bored! He and a couple of friends had gone to a movie, but he didn't want to see what they were seeing, so he was seeing "Michael Clayton" with George Clooney by himself. He had about 10 minutes to kill before the movie started, so he called. Hey, at least he called! I'll take a chat with him any way I can get it! HA!
I just finished my Karen Kingsbury book. I picked up two books from the library yesterday: "74 Seaside Avenue" by Debbie Macomber, another one of my favorite authors; and "Let's Roll!" by Lisa Beamer. Her husband, Todd Beamer, was the Hero on United Flight 93 on September 11. Not sure which book I will read first. Since the last one was kind of a tearjerker, I may read the Macomber book first.
